dipende da cosa vuoi sottolineare....
se vuoi sottolineare il fatto che è successo nel passato e la negazione: they did not (didn't) have a pizza...
oppure se vuoi essere generico va bene: they hadn't (had not)a pizza...
Ma la forma HAD NOT/HADN'T la usi soprattutto nel caso in cui hai il verbo have got...

La forma negativa si fa Verbo + Not
quindi anche They had not a pizza non è sbagliato, quella sopra è solo la forma negativa abbreviata e più colloquiale.
